Recipe: Shakshuka, with a twist

Today was the day I finally accepted the Leftover Challenge. I tend to meal prep a few different meals on Sundays and usually by Thursday, I’m beginning to throw food out. I’m a really picky eater in the sense that, even though I eat most things, I hate eating the same thing over and over again. I also really enjoy cooking and would actually happily prepare freshly cooked meals at every meal. My challenge isn’t so much finding time to do this, but rather, I struggle to cook just for one (perhaps I’m practising for a family of four lol… who know?). Every time I cook, there’s leftovers for at least another three meals (and from this, comes the waste).

However, times are changing and if you’re anything like me, throwing away food just does not sit right anymore. So, I decided to come up with system to not only utilize my leftovers, but also involve my love of cooking and developing recipes (which I’m excited to say, I’ll be sharing on this blog in the near future).

After careful consideration of my schedule and eating habits, I have planned the following:

  • Meal Prep occurs on Sundays, as usual. I choose three meals that I either love preparing (or a meal I’ve never cooked before) and spend the day relaxing in my culinary bliss.
  • Wednesday has become another meal prep day. Think Chopped from the Food Network, where the leftovers in the fridge become the ingredients for the next set of meals.

Simple enough, right? I’ll keep you posted on my progress, but for now, have a quick (TikTok quick! lol) look at the attempt that inspired this idea.
