Easy Meatloaf Recipe

Since I fully relocated to the United States in August 2022, I have thoroughly enjoyed throwing myself in tradition American and traditional Southern cuisine. For someone who’s eyes feasted on these delicacies via the Food Network for years, it’s truly been an exciting time trying out the tried and tested recipes that have nourished American families over the years.

Normally, I scour the internet for recipes that look interesting and nutritious, but sometimes, a meat-based recipe crosses my path that I think would be a great addition to my recipe collection for when I have meat-eaters over for a meal.

Long story short, the recipe turned out really amazing for so little ingredients. I added two cloves of crushed garlic to the recipe because I felt it would balance out the flavor of the spices – which it did. The only thing I feel it was missing was a vegetable element to add moisture. My favourite go-to choice for minced beef is chopped button mushrooms, but I have found that finely diced carrots work just as well. Find the recipe below.

My Uber Driver’s Easy Meatloaf Recipe

  • 1 lb Minced Beef (best quality you can find. I use organic, grassfed beef.)
  • 1 Shallot (finely minced)
  • 2 cloves Fresh Garlic (finely minced)
  • 1 Egg (room temperature)
  • .5 tbsp Salt
  • .5 tbsp Freshly Ground Black Pepper
  • .5 tbsp Red Pepper Flakes
  • 1 tbsp Salt-free Vegetable Seasoning
  • 3 tbsp Ketchup
  • .5 tbsp Light Brown Sugar
  • .5 tbsp Ordinary Store-bought Mustard
  • 1 tsp Season Salt (No MSG)
  • .5 cup Italian Inspired Panko Bread Crumbs
  1. Preheat oven to 350 degrees F (175 degree C). Lightly grease a 9×5- inch loaf pan.

  2. Finely chop the shallot, garlic and prepare the rest of your spices by measuring them out.

  3. Combine the beef, onion, breadcrumbs, egg and all the spices to a bowl. Mix with a spoon, making sure to be gently (but thorough) with the mixing process.

  4. Transfer mixture to the loaf pan, pressing gently (not hard at all!) to make sure that the mixture fills each corner.

  5. Mix ketchup, brown sugar and mustard together in a small bowl and using a spatula brush, spread a decent layer on top of your raw meatloaf mixture. Don't be shy, you can use a lot.

  6. Bake in a pre-heated over for about an hour, or until the juices run clear. Make sure to rest your meatloaf for five to seven minutes after you take it out of the over to ensure that the meat remains moist.
