I hate wasting food, so every 10 to 14 days, I scour the fridge and cabinets for food and ingredients in danger of going bad, and then I dream up creative ways of using them all in one dish. I haven’t had many exciting adventures in a while (mostly because money is tight and I just don’t earn enough to buy more than the basics).
However, last week, I was craving hash browns for breakfast and, even though I didn’t have Russet potatoes that’d use for my usual recipe, I did have half a small bag of baby potatoes and thought, “Why the hell not?”
Turns out, I’ve found my new favourite sautéed potato recipe (won’t call it a ‘hash’ because I did nothing to the potato, except wash and par-boil it). Give it a try and let me know what you think. Also, if you edit it for the better, kindly share it with all of us in the comments below.
Best Ever Baby Potato Hash
Super easy recipe, using only a total of 8 ingredients.
- Caste iron pan
- Spatula
- 1/2 small bag Baby potatoes (par-boiled for 10 minutes)
- 1 tbsp Olive oil (extra virgin)
- 2 slim slices Butter (unsalted)
- 1/2 large Red onion (sliced length-wise)
- 1 tsp Complete Seasoning
- 1 tsp Garlic powder
- 1 tsp Ground black pepper (fresh, if possible)
- 1/2 tsp Smoked paprika
- Kosher salt (to taste)
In a caste iron pan over medium-high heat, add olive oil and butter to melt and mix together before immediately adding the red onions to gently sauté.
After about 2 minutes season with Complete seasoning, garlic powder, ground black pepper and kosher salt. Stir and allow the seasoning to marinate the onions as they turn translucent (about a minute) and then add the par-boiled baby potatoes and stir for a minute and a half.
Add smoked paprika and sauté for another 2 minutes and then serve.
