I don’t really cook or eat pasta dishes often. It’s weird because I actually love pasta, but I don’t know… I guess I didn’t grow up eating pasta much, so it never really caught on my radar. I want to change that; and by change that I mean, actually learn a few pasta recipes I can regularly rely on, are delicious, healthy, and easy to prepare.

Searching the internet, I stumbled across this interesting Creamy Garlic Penne Pasta that just looked incredible. I had some mushrooms that needed to be used, so I added that – and it was delicious. This is a good recipe to prepare for meal prep or a dinner for friends or family. I mean, the meal was just as delicious the next day (if not more delicious!). I just added a tiny bit of milk and more Parmesan cheese to loosen the pasta and voila!

Creamy Garlic and Mushroom Penne Pasta
An easy-to-make Penne pasta dish that is delicious and perfect for lunch or dinner.
- 1 box Penne Rigate (cooked as directed, drained and kept hot)
- 3 tbsp Unsalted butter
- 3 cloves Garlic
- 2 tbsp All-purpose flour
- 3/4 cup Beef broth or chicken broth
- 3/4 cup Whole milk or whipping cream
- 3/4 cup Fresh parsely (finely chopped)
- 1/3 cup Parmesan cheese (grated)
- 1 tsp Kosher salt
- 1 1/2 tsp Fresh black pepper
- 1 Yellow onion (finely chopped)
Cook Penne pasta in rapidly boiling salted water, according to the instructions on the box.
In a medium sauce pan, melt butter and add finely chopped onion. Saute until translucent (about 2-3 minutes) and then add the mushrooms. Saute for another 3-5 minutes (or until mushrooms have slightly browned or caramelized) before adding the garlic. Saute for another 2-3 minutes.
Add flour and cook for a minute, stirring constantly.
Stir in the broth and milk. Cook, stirring rigorously, until sauce boils and thickens.
Add the chopped parsley, Parmesan cheese, salt and pepper to taste.
Stir until the cheese has melted. Toss the hot pasta with the sauce and serve immediately.
